Pemberdayaan Masyarakat Darul Imarah Melalui Pelatihan Pembuatan Camilan Sehat Berbahan Dasar Ubi Jalar Ungu (Ipomoea batatas L. poir) di Kabupaten Aceh Besar

Kegiatan pengabdian kepada masyarakat ini bertujuan untuk meningkatkan pengetahuan dan keterampilan masyarakat dalam mengolah ubi jalar ungu (Ipomoea batatas L. poir) menjadi camilan sehat dan bernilai ekonomi. Pelatihan dilaksanakan di Kecamatan Darul Imarah, Provinsi Aceh, dengan melibatkan 25 peserta yang terdiri atas ibu rumah tangga dan pelaku usaha kuliner lokal. Metode yang digunakan adalah hands-on cooking class dengan pendekatan partisipatif, meliputi tahap penyuluhan, demonstrasi, dan praktik langsung. Hasil kegiatan menunjukkan peningkatan pemahaman peserta terhadap manfaat gizi ubi jalar ungu serta kemampuan dalam menciptakan olahan seperti dessert cup dan bola-bola ubi yang menarik dan sehat. Sebanyak 72% peserta menyatakan minat untuk mengembangkan produk tersebut sebagai usaha rumahan. Kegiatan ini menunjukkan bahwa edukasi berbasis praktik efektif dalam mendorong pemanfaatan pangan lokal sebagai sarana pemberdayaan masyarakat dan peningkatan ketahanan pangan keluarga.
